Un tournant d\u00e9cisif eut lieu en 1841, lorsqu\u2019Edmond Albius, un jeune esclave de l\u2019\u00eele de La R\u00e9union, d\u00e9couvre la pollinisation manuelle du vanillier. Cette avanc\u00e9e majeure a permis son implantation dans d\u2019autres r\u00e9gions tropicales, notamment \u00e0 Madagascar, devenu aujourd\u2019hui le premier producteur mondial de vanille. Le vanillier\u00a0est une plante tropicale grimpante appartenant \u00e0 la famille des Orchid\u00e9es. De nature ombrophile, il se d\u00e9veloppe \u00e0 l\u2019ombre des arbres, dans des environnements chauds et humides, o\u00f9 il puise les conditions id\u00e9ales pour sa croissance. Parmi plus de 100 esp\u00e8ces d\u2019orchid\u00e9es du type Vanilla, seules trois sont cultiv\u00e9es et commercialis\u00e9es \u00e0 grande \u00e9chelle. Vanille planifolia Vanille Pompona Vanille tahitensis La M\u00e9thode Bourbon : Un Savoir-Faire d\u2019Excellence La m\u00e9thode Bourbon est un proc\u00e9d\u00e9 artisanal qui pr\u00e9serve toute la richesse aromatique de la vanille gr\u00e2ce \u00e0 plusieurs \u00e9tapes cl\u00e9s : \u00c9chaudage La pr\u00e9paration Bourbon s\u2019organise en plusieurs \u00e9tapes dont la premi\u00e8re est l\u2019\u00e9chaudage des gousses. Elles sont tremp\u00e9es dans une eau \u00e0 une temp\u00e9rature comprise entre 60 et 80\u00b0C pendant 3 minutes. Cette \u00e9tape vise \u00e0 stopper les processus biologiques des gousses qui les am\u00e8nent naturellement \u00e0 se fendre et permet d\u2019homog\u00e9n\u00e9iser les lots. \u00c9tuvage L\u2019\u00e9tuvage dure 48 heures environ. Apr\u00e8s avoir \u00e9t\u00e9 \u00e9chaud\u00e9es, les gousses sont plac\u00e9es rapidement dans de grandes couvertures roul\u00e9es sur elles-m\u00eames puis plac\u00e9es dans des malles. C\u2019est \u00e0 l\u2019issue de cette deuxi\u00e8me \u00e9tape qu\u2019elles commencent \u00e0 arborer une couleur fonc\u00e9e proche du cacao. S\u00e9chage Le s\u00e9chage lent des gousses, alternant soleil et ombre, r\u00e9duit l\u2019humidit\u00e9, d\u00e9veloppe les ar\u00f4mes et pr\u00e9vient les moisissures. Affinage La derni\u00e8re \u00e9tape de pr\u00e9paration consiste \u00e0 placer les gousses dans des grandes caisses d\u2019affinage tapiss\u00e9es de papier sulfuris\u00e9. Cette \u00e9tape dure de 2 \u00e0 6 mois et c\u2019est lors de celle-ci que les ar\u00f4mes les plus subtils apparaissent et s\u2019affinent.
